Questions

Is the cut-off part deleted?

No. Cropping hides the edges (the PDF’s “crop box”); the content is still inside the file, and some apps can show it again. To remove something for good, cover it with the Eraser in Edit PDF.

Why keep the same crop on every page?

So every page stays the same size, which looks tidy when reading or printing. Untick it to trim each page as tightly as possible.

Will scanned pages crop well?

Usually. Grey shadows or dark edges around a scan count as content, so the automatic trim may leave them. Use Cut a set amount for those.

Is my file uploaded anywhere?

No. The file is opened and changed inside your browser, on your own device. There is no upload step and no server that receives it. You can even switch off your internet after the page has loaded and most tools keep working.
